Have you even encountered a moment in your life when you realized things weren't working? This year has been this type of battle for me. I think we all encounter moments when life pushes and pulls at us. We try to make it what we think it should be but life has other plans.
This is what I have been doing for recent months. Trying to push and pull at life making it was I thought it needed to be. However, after weeks I finally reaching a point where I knew if I tried to push any harder I would break (and I almost did)…luckily I learned a valuable lesson. There are times in life you just need to STOP!!! We just need to stop, step back and breathe.
Have you ever in life worked to hard to find a solution? In recent months, one of my goals was to figure out how to create that perfect soft cookie. I have made dozens and dozens of cookies (choc chip, peanut butter, snickerdoodle) and the list continued as I was never pleased with the result.
This project had been a struggle but something I could never come to peace with. As I previously stated, this concept seems to have displayed what has been occurring in my life in general during recent months. While the concept was simple, getting there was part of the battle.
The best part is when I finally stopped, breathed, and looked at life I knew things needed to change. My life has forced me recently to change my job expectations, my home, my schooling and a number of other things. I had no idea life could throw that much at a person at once.
I think it occurred so I could learn life is a simple experience and sometimes we need to be reminded to stop and enjoy it before it is gone. The best part of the experience is that when I did….I finally was able to make the perfect soft cookies. It is an amazing experience to realized what is possible once I stopped and breathed!!!!! So I share with you one of the successes - Soft Double Peanut Butter Cookies.

Soft Double Peanut Butter Cookies
1/2 C Unsalted Butter, softened
1 C Peanut Butter
1/2 C White Sugar
3/4 C Brown Sugar, packed
1 Tbsp Milk
1 Tsp Vanilla
1 1/3 C Unbleached Flour
3/4 Tsp Baking Soda
1/2 Tsp Baking Powder
1/4 Tsp Salt
1/2 pkg Peanut Butter Chips
Beat together butter and peanut butter until combined. Add sugars and beat until fluffy. Mix in egg, milk, and vanilla until smooth. Add flour, baking soda, baking powder, and salt stir until blended. Mix in chips until combined.
Bake at 350 degrees F for about 10 minutes. Do not over bake. Let cookies cool on baking sheet for a few minutes before removing to cool completely. Store in an airtight container at room temperature.
